Summer Fruits Tea Cake (and 10 Books to Go With It)

This lightly sweetened Summer Fruits Tea Cake is easy to prepare, tender, and conveniently works with any fruit you have at home, either fresh or frozen. It stays moist for several days, but also freezes well. It's perfect for company, or just to snack on while enjoying a good book.| www.tastyoasis.netI love the feeling of falling into somebody else’s world, temporarily leaving my own reality to find a place in another. In some ways, I experience that in my work. It’s my privilege as an interpreter that I’m allowed into the most private moments of other people’s lives, or simply that I have the opportunity to walk into situations that I would never otherwise have access to. Although that’s not at the foundation of why I became a sign language interpreter, and certainly not a main reason why I continue to be one, it is a part of what keeps me balanced.

Being in the hospital room as a child is born, in the court room when a divorce is granted, on the course as someone learns to ride a motorcycle, in the classroom where they study to be a priest, a rabbi, a teacher, a lawyer, an historian or an artist, in the office when someone is fired, on the phone for a fight between a mother and her son, or on a stage in front of tens of thousands of people, it’s my honor to gain perspective from other people’s lives.

While my professional access to these experiences might be unique, I know I’m not alone in the desire to immerse myself in other’s stories. And for as long as I can remember, I’ve done that with books. I was the little girl hiding with the flashlight under the covers, escaping into The Secret Garden. I was the teenager devouring trashy novels and Wuthering Heights with equal abandon (which I guess might have been trashy in its day.)  In my twenties I called the New York Public Library my second home, and missed my subway stop time and again as Barbara Kingsolver, Isabelle Allende, J. K. Rowling and David Sedaris wove their tales around me. And in my thirties I fell in love with audio books and cookbooks, returned to children’s literature, and began a habit of reading electronically.

When I think “apple picking,” I picture cool fall days, sweaters, hot cider, and crunching leaves on the ground. I do not imagine 95 degree weather, storm clouds blowing in violently, and getting caught in a torrential downpour.

But remember a few weeks ago when I wrote about NOT taking the kids peach picking? Well, my mom was in town visiting last week, and when she’s here we have to up our game a bit. She’s not one to just laze around, so on one of the hottest, grossest days of the summer we decided to pack the kids in the car and drive an hour away to go…peach picking. Yeah, that didn’t turn out so well. If you hadn’t noticed, it’s September now and peaches should have been picked around a month ago.  So to satisfy the 3 year old in our midst, we managed to pull around a dozen unripe green peaches from the fruitless trees, and my vision of homemade peach ice cream for dessert that night was promptly shattered.

We hadn’t intended to apple pick this early, (in fact, I didn’t even know it was possible,) but it was the saving grace to our day, and we hauled out 13 pounds of gorgeous crispy tart apples. We’re an apple family, and Pink Ladies and the ones we got are our favorites. Because we go picking every October, we’ve always been way too late for Honeycrisps, which happen to be one of the earliest varieties available. So this really did feel like a bonus, and made our entire crew happy. (And let me tell you, we needed a dose of happy because there was a whole lot of crank going on.)

I want to tell you that my first thought was “Apple Pie!” But here’s my confession: I’ve never made one before. I know, you’re probably thinking, “how can I possibly be reading this woman’s food blog if she’s never made an apple pie? Isn’t that one of the most basic things people in this country make?” Well, yeah, it might be. And around a dozen years ago I marked a recipe for this amazing sounding Apple Pie with a Cheddar Cheese Crust, and went so far as to make the dough and stick it in the freezer, but I never actually got around to baking it. (It’s a bit embarrassing.) So no, you’re not getting an apple pie post here. I’m sorry.

My first thought was actually, “Applesauce!” Because applesauce is one of my ultimate comfort foods, and it takes such little effort to make it homemade. It’s something my mom loves, and so I’d frequently find it on her stove when I was a kid. Especially at Hanukkah, when it was mandatory to have sweet fresh applesauce to serve with the salty crisp potato latkes she would fry up. When my kids were first eating solid foods, I would make it all the time, but I admit that I buy the little pre-packaged cups at the market way too often these days to stuff in lunchboxes. There’s nothing particularly wrong with them. There’s no added sugar, or funky ingredients, but it’s a waste of money and plastic and I never feel really good about it.

Because I know homemade applesauce, with just a touch of vanilla and cinnamon, tastes ten times better than anything you can buy in the store….

Roasted Peaches with Basil and Ricotta (in the toaster!)

I really want to tell you these peaches came from a trip to an orchard with my angelic kids or the local farmers’ market, but that would be lying. Because although I had every intention of going to the farmers’ market the other night after the camp and daycare pickup, the 5pm meltdown I was faced with in the car made that… unappealing. Dragging tired, cranky kids with me so I could fawn over gorgeous produce just seemed foolish. So luckily I had stopped during my lunch hour the day before at some random grocery store for a quick fruit run, and I scored a few peaches carted in from a state far away. Ideal? No. But real life? Yes.  And the basil, you ask? Growing freely in big bunches in my yard? Ha. It too came from the store in one of those dreaded plastic clamshells.  I may see myself as the CSA box girl, creating wild creations from whatever lands in my neighborhood pickup every week, but the honest truth is that year after year I keep forgetting to sign up. So in the meantime, I make do with what I’ve got. Lunch hour peaches.  Welcome to my world.

But look at these peaches!!! They were pretty perfect on their own, because it is summer after all and it’s prime season for them. Straight up, they’re delicious. But with a little extra effort, they become heavenly. Halved and filled with a buttery brown sugar and basil concoction, they’re roasted for just 20 minutes and transform into a simple summer dessert that makes everyone happy. Okay, you’re shaking your head because I said roasting and summer in the same sentence, and you remember me just telling you about my ancient hot house where the last thing I want to do is turn the oven on in August. But wait! I have something that may blow your mind… You can just use your toaster oven!

I started making this recipe nine years ago, when I saw this life changing article in the New York Times by Melissa Clark. (I know, my version of life changing might not be yours, but go with me on this.)  It was called “No One Ever Slaved Over a Hot Toaster Oven.” I was living in my tiny Manhattan apartment at the time, which barely had a kitchen to speak of. My actual oven served as my version of storage, and all of my pots and pans and baking sheets made a home there. The idea of emptying it out to cook anything small seemed like a waste, and the risk of heating up my apartment during a New York summer was beyond me. (Confession time: today my oven still is filled with muffin trays and baking sheets, even though I technically have room elsewhere for them. So I continue to face the same self-imposed obstacles. Please tell me I am not alone in this!) But Melissa turned me on to using my toaster oven to cook real food, and not just make frozen waffles and cinnamon toast in it. It was revolutionary. I started baking chicken, and roasting vegetables and making these amazing peaches all on my counter top.  I haven’t looked back since….
